The Ragi malt is also called as ragi ambli or ragi ambali is very popular across many regions of Karnataka state of India. Ragi malt or salty ragi porridge is prepared using finger millet flour, buttermilk, salt, onion and curry leaves. All these ingredients are optional and you can replace them with any other ingredients of your choice.

Ingredients: (measuring cup used = 240ml)

  1. 3 tbsp ragi or finger millet flour
  2. 2 cup water
  3. 1 cup buttermilk
  4. Salt as per your taste
  5. 1/2 onion finely chopped
  6. 4 – 5 curry leaves
  7. Coriander leaves, finely chopped (optional)
  8. 1-2 Green chilies, finely chopped (optional)
  9. A big pinch of asafoetida (optional)
  10. 1/2 tsp cumin powder

Instructions for making Ragi malt:

  1. Firstly, in a small cup take 3 tbsp of ragi flour.
  2. Then, by stirring, dissolve ragi millet flour in 1/2 cup water.
  3. Make sure there are no lumps left out.
  4. Further, in a pan keep remaining 1.5 cups of water for boiling.
  5. When the water starts boiling add in dissolved ragi flour.
  6. Keep stirring continuously on medium-low flame.
  7. After a few minutes(approx. 6-7 min) the mixture thickens and turns glossy.
  8. Switch off the stove and wait until completely cool.
  9. Further, add in salt.
  10. Also, add in a cup of buttermilk and mix well. You can skip the below steps and serve it with pickle and ghee if you wish.
  11. Again, add in asafoetida, cumin powder and give a quick mix.
  12. Furthermore, add in finely chopped onion.
  13. Also, add in finely chopped curry leaves, green chilies, coriander leaves and mix it well.
  14. Finally, serve it and enjoy.

Notes:

  1. To make it spicy you can add either finely chopped green chili or crushed pepper. Both the ingredients are optional.
  2. Optionally you can add either finely chopped ginger or fenugreek powder(Menthe) or any other spice powder of your choice.
