Methi rice is a great way to include greens in your diet as it is rich in iron and manganese.  A green fenugreek flavored rice is a one-pot meal and very easy to prepare. I love any dish made up from fenugreek so if you are one among the methi lover then you must try this delicious and very healthy Menthya Bath which tastes awesome as it is or with just a simple raitha. Whenever you want to have one dish meal than you can try this flavorful methi rice and this is also ideal for lunch box. Do try this and let me know your feedback in comment section below.

Ingredients:

  • 1 cup cooked/leftover rice
  • 2 cup chopped fresh methi/fenugreek leaves
  • 1 onion chopped
  • 1 tomato chopped
  • 1/2 cup fresh/frozen green peas
  • 1 tbsp ginger+garlic+green chili paste ( 1″ ginger, 2 green chilies, 3 cloves of garlic)
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp coriander/dhania powder
  • 1 tsp garam masala powder
  • 3 tbsp
  • 1/2 tsp jeera/cumin powder
  • oil salt to taste

Direction:

  1. Firstly, coarsely ground ginger, green chili, and garlic.
  2. Then, heat 3tbsp oil in the pan.
  3. Once the oil is hot enough add ginger, garlic and chili paste. Saute it for 1-2 min or till the raw smell goes away.
  4. Further, add onion and saute it for 2-3min till it turns nice golden color.
  5. Then, add methi/fenugreek leaves and the little salt and mix well. Now close the lid and cook the methi leaves for 3-4minutes till the methi leaves soften.
  6. Furthermore, add turmeric, red chili, cumin powder, coriander powder, and garam masala. Mix all masalas well and saute it for a min or two.
  7. Then, add tomatoes and frozen/boiled peas mix well, cover and cook it for another 3-4 minutes till tomato softens.
  8. Finally, add the cooked rice and salt as per taste and mix well with the masala.
  9. After 2-3min serve the hot methi rice with raita or as it is.

Step 3.Further, add onion and saute it for 2-3min till it turns nice golden color.

Step 4. Then, add methi/fenugreek leaves and the little salt and mix well. Now close the lid and cook the methi leaves for 3-4minutes till the methi leaves soften.

Step 5. Furthermore, add turmeric, red chili, cumin powder, coriander powder, and garam masala. Mix all masalas well and saute it for a min or two.

Step 6. Then, add tomatoes and frozen/boiled peas mix well, cover and cook it for another 3-4 minutes till tomato softens.

Step 7. Finally, add the cooked rice and salt as per taste and mix well with the masala.

Step 8. After 2-3min serve the hot methi rice with raita or as it is.
